The Heritage of Maison Rouge
Founded in 2018 in the historic district of SoHo, New York, Maison Rouge was envisioned as an unpretentious sanctuary of world-class culinary craftsmanship.
Under the visionary leadership of Executive Chef Alexandre Moreau (alumnus of Le Gabriel Paris and L'Espérance), our team blends ancestral French techniques—confit, slow-reduction demi-glaces, artisanal pastry lamination—with the vibrant agricultural bounty of New York’s Hudson Valley.
Our Philosophy: Farm, Forage, Fire
We work directly with more than twenty-two family farms, organic co-operatives, and sustainable day-boat fisheries. Every vegetable is harvested at peak maturity; every fish is line-caught; every steak is dry-aged on-premise in our custom Himalayan salt aging room for a minimum of 45 days.
